Restoring old family vineyards, she adopts natural winemaking, eschewing additives and invasive farming. The bianco emerges from 65-year-old vines nestled in 2 hectares of calcareous rock soils. Hand-harvested and sorted in early September, the grapes undergo a six-month whole cluster maceration in stainless steel, followed by spontaneous fermentation lasting two weeks. Aged on lees for nine months in stainless steel with no stirring, the wine remains unfined and unfiltered. With minimal SO2 (0.002 g/L) and a modest 10% alcohol content, it embodies Silvia's dedication to authentic winemaking.
